Oatmeal Cookies 1 cup vegetable shortening (Crisco) 1 cup brown sugar 1 cup granulated sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon baking soda 3 cups quick oats 1 cup of dried "cherries" In a large mixing bowl, cream together the shortening and both sugars until the mixture is light and fluffy. Add the eggs and vanilla and mix well. Slowly mix in the flour and soda until the dough is well combined. Use 2 table spoons to place a table spoon of dough in balls on a cookie sheet.
