(Curry fried rice with shrimp).
This rice dish is one of my favorite recipes. Delicious fried rice dish with lot of shrimps, savory with curry sauce and green peas. It is an excellent dish to serve alone with side salad or as a side dish. I love to make curry fried rice with shrimp when we have special guess for dinner. It’s an authentic recipe from Khmer Krom in Karmourn Sor ( Kien Giang) province .
Here are a few tips to make the best-fried rice. Cooked rice is the most important ingredient when you make fried rice. Rice must be firm and not sticky, and left over rice is the best to make fried rice with. Shrimp must be fresh otherwise the entire dish will ruined by fishy taste of bad shrimp. When you buy shrimp,look for shrimp that have a translucent with a grayish green color, and firm flesh. Fresh shrimp have very mild or no odor. If you smell the odor is strong, then the shrimp is not fresh. Always use non-stick frying pan when make fried rice.
It’s important before you cooked this dish to get every thing line up, and ready to go because it doesn’t take much time to cook curry shrimp fried rice.
- Ingredients :
- 1 lb. Fresh shrimp. Peeled and de-veined.
- 2 Cups frozen green peas. Rinsed and drained.
- 4 Cups cooked-rice or left over rice.
- 3 Tablespoons cooking oil.
- 1 Tablespoon curry powder. (Any kind of your favorite brand is fine).
- 1 Tablespoon fish sauce.
- 1 Tablespoon soy sauce.
- 1 Teaspoon sugar.
- ¼ Teaspoon salt.
- Dash of black pepper.
- 2 Cloves garlic. Minced.
- 1 Small yellow onion. Finely chopped.
- Procedures :
In a small bowl, marinated shrimp with curry powder, fish sauce. sugar and soy sauce. Set a side.
Heat up a non-stick skillet or wok in high temperature. When it hot pour oil in.
Sauté garlic, onion, shrimp and peas. Stirs till shrimp turns color.
Add rice stirs till rice well coated with curry sauce and fluffly.
Sprinkles with salt and black pepper. Stirs well.
Serve hot.
